This is yummy!


This is one of my favorite recipes, Watermelon Tomato Salad with Feta Cheese. I found it on farmflavor.com. Served cold, it hits the spot on this hot summer day.


Ingredients

4 heaping cups of 1-inch watermelon chunks, seeded

1.5 cups of tomatoes, chopped or grape tomatoes halved

1/2 cup red onion, quartered and thinly sliced

1/4 cup fresh basil, chopped

1.5 tablespoons extra virgin olive oil

3 tablespoons fresh lime juice

1/4 teaspoon freshly ground sea salt

1/8 teaspoon freshly ground black pepper

1/2 cup crumbled feta cheese


Instructions

Combine watermelon cubes, tomatoes, red onion, and basil in a large bowl

Whisk olive oil, lime juice, salt and pepper together in a small bowl. Pour over the watermelon mixture and toss lightly

Sprinkle feta cheese over salad and serve immediately. Refrigerate leftovers.


** Note: If preparing watermelon mix ahead of time, add the oil mixture and feta cheese right before serving to prevent salad from getting too soggy.


Yield: 4 servings (1.5 cups each)
